Olivier Cousin, ‘Le Franc’,

Loire Valley, France, NV

Biodynamic

When it comes to Loire Valley red wines, one grapes always dominates more than any other - Cabernet Franc.

Cabernet Franc is one of the parents (alongside Sauvignon Blanc) of Cabernet Sauvignon, and is well known for having a rustic edge to them that pairs them well with simple easy cooked meals.

Olivier Cousin has been at the front of the “natural wine movement” in the region for many a years now. His approach to wine making began in 1987 when he took over his grandfathers 12ha of land and (thanks to his grandfather) none of the vines have ever seen any chemicals being sprayed on them, in 2005 he left the AOP system, thus allowing him the freedom to make the wines he really wanted.

This Cabernet Franc was just simply delicious. Fermented using indigenous yeasts spontaneously, followed by ageing in old french oak. What I love about this wine is that it almost goes against the traditional Cab Franc of the region, esquing the green, herbal edge that you often find in these wines, and yet giving plenty of delicious bright red fruits, a wild floral aroma and this crunchy texture to the palate. It can easily be enjoyed as a glass on its own or better yet with some home made terrine or a hearty game dish also.

Available from the team at Les Caves de Pyrenne - price on request.
